Mmm… Tasty coping

This morning, I recited a litany to my husband of all the things I need to do. It ended, “And I’ve been trying to make scones all week! It takes half an hour, but I just haven’t found the time.” He told me to put off school for half an hour and go make the darn scones. And he was right. There is something very comforting about baking: you follow the instructions, and in no time at all you have tasty treats. Unlike a meal, the products of baking usually last a couple of days, so there is an extended feeling of “Ahh… I made that.” Yep, baking is definitely a coping mechanism for me.

When the scones came out of the oven, I handed one to my husband for taste testing. “Delicious!” Smart man πŸ™‚

If anyone is interested, the recipe I used is called Simple Scones. You can find it at I substituted dried apricots for the raisins because I’m rebellious like that.
